what is GI?

The glycemic index (GI) is a value given to carbohydrates as a ranking between 0 to 100. This value is a measure of the extent in which carbohydrates raise our blood sugar level after eating.

Foods with high GI are rapidly digested and absorbed which result in fluctuations in blood sugar levels. Foods with low GI are slowly digested and absorbed which result in the gradual rising of blood sugar and insulin levels. In general, low GI foods are much healthier for everyone. Low GI diets have been shown to improve glucose and lipid levels for those with diabetes (type 1 and type 2). Also, low GI diets have benefits for those who are trying to control their weight because low GI foods help control appetite and delay hunger.
